Our first year bringing you Madakaripura, produced by our long time friend and Barista Competitor turned Coffee Processor, Arief Rachman.
This coffee was grown in the Bromo Highlands of East Java, Indonesia. Arief longed for a coffee that is meticulously processed to his competition coffee standards, so he set out to carve a new standard for coffee quality in East Java, a region known more for its commodity grade coffees.
This is Madakaripura's 5th Harvest Season, and every year there is major progress in their coffee quality.
During this year's harvest we asked Arief to make a special lot for us using "Mossto", a byproduct of coffee fermentation usually discarded.
Ripe coffee cherries are picked and sterilised in salt baths to remove unwanted bacteria and dirt, then placed in hermetically sealed bags with leftover coffee cherry juice (Mossto) for 48 hours, then dried on raised beds for 29 days.
This process brings out a refreshing grape note, accompanied by an effervescent orange finish.
